• Black and white truffles

  Truffles are a very special delicatessen usually found only in some regions of Italy. They grow naturally underground, so the hunter needs a very special companion, a dog, trained to look for the truffles. There are different types of truffles and they mature at different times of the year, depending on the region. Therefore, different truffles are available throughout the year. They are usually classified by their colour, season and region. The main difference between White and Black truffles is that, although the White's aroma is intense, it tends to fade pretty quickly, as opposed to the Black, which is more subtle, but have a longer longevity.
